Did you all know that Pi Day is celebrated on March 14th (3/14) – in commemoration of the mathematical constant π (pi)? To celebrate, FOODIE by Glam asked me to curate a pie recipe collection, and I knew that I wanted my compilation to reflect my family’s Italian heritage. My husband is Italian (I’m half-Italian), and I’ve always admired the Italian-mother love that goes into preparing meals and serving them.
When my mother-in-law comes to visit I typically receive a message informing me that she’s bringing a few (a few!) chicken cutlets and other home-made Italian delicacies. In her love-language, a few equals a ton, resulting in the most amazing leftovers. Although I strive to replicate, my meals will never taste (or look) as delicious as her culinary creations. I admire her memorized-dedication to the old recipes, and everyone loves her Ricotta pie.
I think that there’s something in the above collection for every pie-enthusiast. Some recipes are representative of the “old country” and a few have a bit of an American interpretation.
