The Best Three Bean Summer Salad | #Pyrex100

In many ways, food is the connective tissue to our family and cultures.  Tastes and scents have the ability to transport us back to specific times in our lives – carrying ties to the people and places ingrained in memories.  With summer almost upon us, I’ve been craving a much lighter fare.  Specifically the delicious summer salads concocted in my mother’s kitchen.  Her amazing three bean summer salad recipes were my absolute favorite.  She always made more than enough to share with neighbors – and feed the crew of fellow lifeguards during my teenage summers spent working at a pool.

Like my own kids, I loved helping my mom in the kitchen.  Special occasions were marked by making delicious homemade meals and treats. I naturally thought of her when invited to join in celebrating Pyrex®, a World Kitchen brand’s 100th anniversary. It’s amazing how the vintage Pyrex pieces from my childhood memories remain steadfast household staples today.

Along with the kiddos (a.k.a. expert bean rinsers) we made one of my mom’s delicious three bean salad recipes with my favorite new limited-edition products from the Pyrex 100 “Centennial” and “Vintage Future” 100th Anniversary collections.

Mom’s Three Bean Summer Salad

Ingredients
1 can garbanzo beans (rinsed and drained)
1 can kidney beans (rinsed and drained)
1 can cannellini beans (rinsed and drained)
1/2 red onion (chopped)
1 celery stalk (chopped)
1 cup fresh parsley (chopped)
1 T rosemary (chopped)
1/4 cup olive oil
1/3 cup apple cider vinegar
1 tsp salt
1.4 tsp black pepper
Optional ingredients (not included in the above photos) green beans, garlic powder, onion powder, ground cayenne pepper, honey or sugar.

Directions
1. After rinsing and draining beans, mix in a large serving dish or bowl. Add the beans, celery, parsley, rosemary and onion.
2. In a separate bowl, mix olive oil, vinegar, salt, and pepper.
3. Add the dressing to the large bowl, toss and chill in the refrigerator for several hours to soak up dressing flavor.

  1. I’m a huge fa of bean (and grain) salads! Sometimes I just mix some black beans with sea salt and a good quality extra virgin olive oil! Yum! Can I just say that I love this product and that carrying bag is brilliant!

  2. Pyrex–a staple in my grandparents kitchens, my Mom’s kitchen and I even have one or two of the original ones pilfered from my Mom’s kitchen when I moved out years ago. They last forever and certainly bring back memories. That 3 bean salad sounds good-haven’t made one of those in many years!
