Over the years, my kids have shown me that it’s the little things commemorating the special dates and holidays that mean the most to them. Their excitement over a simple banner on the mantle, handmade decorations or a themed recipe will always make me incredibly happy. That said, I was in great need of upping my game for Saint Patrick’s Day this year – ever since my son came home from school last March wanting to know why he’d been deprived of setting “leprechaun traps” in our home. While I may not ever be the leprechaun-trap-making kind of mom, I can make a mean kiddo-approved green smoothie. And if I can get kale, spinach, Maple Hill Organic Grass-Fed Yogurt and more into my kiddos before they’re out the door for school in the morning – than that’s a win for us all!

A Healthy Green Smoothie for Saint Patrick’s Day

Ingredients

  • 1 cup spinach
  • 1 cup kale
  • 1/2 cup Maple Hill organic plain whole milk yogurt
  • 1/2 banana (peeled)
  • 1 cup frozen mango
  • 1 cup frozen pineapple
  • a few pieces of ice

Instructions

  1. Add all ingredients to blender.
  2. Blend until all chucks are gone to a smooth and creamy consistency.
  3. Pour into glasses and serve immediately.

One of the best things about adding greens to smoothies is that they don’t add a lot of flavor. The combination of banana, frozen mango and pineapple help to add just enough sweetness to make my kids gulp away. Although we also make this smoothie with Maple Hill’s Organic Milk – the Maple Hill’s Organic Whole Milk Yogurt gives this specific recipe a deliciously creamy texture and taste. Not only are Maple Hill’s products grass-fed, but they’re certified USDA and PCO organic, and GMO-free.  You’ll taste the difference as soon as you try Maple Hill.

Along with all the vitamins and nutrients from the organic greens and fruits – I’m happy that my kids are getting solid protein and more from Maple Hill Yogurt. The Perfect Roasted Broccoli

Now and then something happens that makes me stop and reevaluate my kids’ diets. This time around, it was the faces they made at the broccoli on their plates at dinner time on our recent Disney cruise. Let’s just say that they weren’t friendly faces. The kids used to devour my roasted broccoli – but at ages six and nine, they still prove to be picky with some vegetables.  And I suppose that I’ve made my trusted go-to recipes on constant repeat – resulting in a loss of interest.  After making a roasted broccoli with loads of garlic, cheese, and lemon for years – I had to simplify it a bit to get the kids back interested in my broccoli. After a few dinner experiments, I think that I may have stumbled on the perfect roasted broccoli in the process.

The kids didn’t care for the added tomatoes that I threw in at the last minute, but I happen to love the tasty combo and the pops of color.  For now, we’ll just stick to the broccoli!  Get the super simple, kid-pleasing perfect roasted broccoli recipe below:

The Perfect Roasted Broccoli

Ingredients

  • Broccoli, I used a medium size one cut into florets
  • olive oil
  • salt/pepper
  • garlic (optional)

Instructions

  1. Preheat oven to 375
  2. Place the broccoli on a baking sheet, drizzle with about 4 tbsp of olive oil, season with salt and pepper.
  3. If you decide to add garlic, slice it into thin slices and mix with the broccoli.
  4. Mix the broccoli with the olive oil, making sure that it's well coated.
  5. Arrange broccoli in a single level and roast for 10 minutes.
  6. Check on the florets, flip each one and allow the other side to roast for about 5 or 8 extra minutes.
  7. Enjoy!

Watermelon & Strawberry Cocktail

Ingredients

  • 1 tbsp watermelon pucker
  • 1.5 oz watermelon vodka
  • 3.75 oz Tropicana Watermelon
  • Sliced watermelon
  • Sliced strawberries
  • Ice

Instructions

  1. In a cocktail shaker add watermelon pucker, watermelon vodka, Tropicana Watermelon, and ice.
  2. Secure the lid on the cocktail shaker and shake vigorously for 30 seconds.
  3. Strain into a standard rocks glass filled with ice.
  4. Garnish with fresh slices of watermelon and strawberry.
  5. Serve and enjoy!

This was my first time using Tropicana Watermelon premium drink, and I absolutely had to hide it in the back of the fridge so my kids wouldn’t get to it before the party. It’s definitely delicious and refreshing on its own, but it’s an even tastier cocktail mixer. A Delectable S’mores Milkshake Recipe for National S’mores Day

Ingredients

  • 3 scoops of Vanilla Ice Cream
  • 1/2 cup milk
  • 1 tsp Vanilla extract
  • Chocolate syrup
  • 1 graham cracker or chocolate graham cracker (crumbled)
  • Mini marshmallows

Instructions

  1. In a blender blend the ice cream, milk and vanilla extract. We like our milkshakes kind of thick!
  2. Dip the edge of a cup in the chocolate syrup.
  3. Add a cracker in a ziploc bag, crush it, and then dip the edge of the cup in the crackers.
  4. Pour the milkshake in the glass, top it off with mini marshmallows.
  5. With an electric torch burn the edges of a few of the marshmallows. If you have a gas stove you can roast them instead of using a torch.
  6. Drizzle a bit of the chocolate syrup over the top and enjoy right away.

It’s starting to really feel like summer around here, and those carefree evenings of spontaneous entertaining will soon be in full swing.  We always enjoy seeing the neighborhood return to nights of sitting on front stoops and celebrating summer.  And warm weather plus a glass of wine or a great cocktail can bring people together in ways that wouldn’t otherwise happen. With only a few ingredients, our crowd-pleasing Dark & Stormy Lemonade makes the perfect Chambord cocktail for summertime parties.

The muddled blueberries and ample crushed ice make this drink one of the tastiest looking mason jar cocktails around!

Dark & Stormy Lemonade

Chambord-Cocktail-Lemonade-Recipe

Ingredients

  • 1 tablespoons of Blueberries
  • 1.5 tablespoons of Lemonade Mix
  • 1 ounce Chambord Raspberry Liqueur
  • 2.5 ounces Cherry Juice (we used R.W. Knudsen Just Tart Cherry Juice).
  • A few sprigs of Fresh Mint
  • Crushed Ice

Instructions

  1. In a cocktail shaker add a tablespoon of blueberries and muddle.
  2. Add lemonade mix, Chambord raspberry liqueur, tart cherry juice and top with crushed ice.
  3. Shake vigorously for 30 seconds.
  4. Strain into a glass filled with crushed ice.
  5. Garnish with a fresh spring of mint.
  6. Enjoy!

Healthy Party Recipes Inspired by The Little Prince (+ Fandango Giveaway!)

When I heard that Antoine de Saint-Exupéry’s beloved book, The Little Prince was being made into a movie, I was delighted.  As a child, I adored the book and its whimsical illustrations.  And who else remembers the mid-’80s TV series, The Adventures Of The Little Prince?  Clearly nostalgic of my childhood, I can’t wait to catch an early preview of the animated film with my sweet boy.  In anticipation of that day, we have some healthy and super simple star-shaped party food recipes to celebrate.

These quick and easy peasy recipes add a special touch to one-on-one time with kiddos, and they are perfect for a Little Prince inspired party.  My little guy gobbled up his Little Prince pineapple fruit pops, and his peanut butter and banana waffle sandwich in lightning speed.  Who doesn’t love their food presented in star form?

Little Prince Pineapple Star Pops and Peanut Butter & Banana Waffle Sandwich

The Little Prince Themed Party Food

Ingredients

  • Pineapple
  • mini star cookie cutter and large star cookie cutter
  • cake pop sticks
  • 2 whole grain waffles
  • 2 T peanut butter
  • ½ banana

Instructions

    For The Pineapple Star Pops:
  1. Cut the peel off of pineapple.
  2. Instead of cutting horizontal and making rounds, cut pineapple vertically from top to bottom. Slice vertically to create ½ inch thick rectangles. (Cut off any extra pineapple to make it a completely flat and even). Cut around the pineapple-leaving the core intact. Discard core.
  3. Using a small star cookie cutter, cut out stars and insert a cake pop stick in the bottom.
    For The Peanut Butter And Banana Waffle Sandwich:
  1. Lightly toast or thaw waffles.
  2. Spread one side of two waffles with one tablespoon of peanut butter.
  3. Thinly slice banana and place on one side of one waffle.
  4. Place the other waffle on top and press down.
  5. Using a large star cookie cutter, press down on the middle of the sandwich to create a star.
  6. Enjoy!
